I’ve had snobbish ‘foodie’ friends turn their noses up at the idea of Sauce Mixes (and they will ask ‘what is white sauce?’) – but I’ve then tried an experiment on them. The experiment was with a cheese sauce – I made my own, home-made cheddar cheese sauce, and put it alongside a Colman’s Cheese Sauce mix. They had a hard time telling them apart. Not to say they didn’t prefer my recipe, but they had to admit that the packet mix from the UK, was so much better than the equivalent US product.
So – for some recipes, and dishes, the sauce packet for me is ‘good enough’ and often much faster. Convenience is a great thing and for those reasons alone, I’ve use the Colman’s Parsley Sauce Mix, and their Hollondaise Sauce mix – because sure, the home-made might be better, but it’s also a lot of time to make one for a Wednesday night evening meal! 🙂
